The bigger one represents how that species of tree naturally grows. The reason most commercial junipers look like that is because large scale operations don't bother wiring the tree when growing it or putting it into a Bonsai pot, so they all end up going up first then going back down towards the ground where they usually grow as a ground cover plant.
